El Pla Del Penedès,
In the heart of the Penedès, Toni Carbo and his wife Anna Serra work 5 hectares of vines that are part of their joint project, La Salada. Started in 2012, alongside the parallel project of Toni's best friend, Ramon Jané from Mas Candi, they slowly have re-built Toni’s grandfather’s cellar, just below their home in Sant Adurni, where the wines from La Salada are now almost exclusively vinified.
Toni descends from a long family line of winegrowers, most of whom sold their own crops to large production cava houses in the region. While Toni and Anna continue to sell the majority of their grapes, La Salada is a collection of their most cherished vineyards, worked organically and by hand, with a concentration and respect for the indigenous grape varietals of the region.
Toni’s vision is to share the traditional styles of the Penedès pre-industrialization. He looks for full ripeness, texture, and balance and works with short macerations to protect the wines from oxygen. No sulfur is used and fermentations are done predominantly in stainless steel tanks, as well as concrete. The wines are a reflection of Toni’s insatiable energy, sparkling eyes, and free spirit. True wines of emotion, that evolve beautifully over time, and are a nod to the collaborative energy with Anna and Ramon.
