The Merlot was planted by Laurent's father in the 90's, when Bordeaux varietals where the rage. He pulled out the old vines planted in the 60's of Grenache in order to incorporate the Merlot in his vineyard. Upon inheriting the vineyard, Laurent was bothered by the presence of Merlot and wondered what to do with this international varietal. By harvesting earlier, alongside the Grenache, he succeeds in finding a distinct freshness vibrant expression of fruit, without losing the sense of terroir and the layers of spice classic to the region. Idoine has denser, darker fruit than Otium. Bramble fruit and red plums dominate, and there is an almost silky texture to the fruit. The slightly vegetal notes and touch of garrigue lift the fruit and add to the tonic nature of the wine.
