GRAPE: Old vine Grenache Noir, a hint of Macabeu, Grenache Gris and Carignan

AGE OF VINES: 60+ years old, planted by Laurent's grandfather

SOIL: clay-limestone with gravel and granitic sand 

VINIFICATION: whole-cluster fermentation, 7 days infusion, zero sulfur added

ÉLEVAGE: 5 months in stainless steel

Otium is a fresh and energetic rendition of Grenache, full of crunchy red berry fruit, blood orange, and sweet spice. While the grapes are harvested on the early side, with the intention of maintain acidity and freshness, the "red citrus fruit" combined with a distinct salinity lend to a complex and food-friendly expression.
