80+-year-old vines of Pansa Blanca planted on a single parcel of granite soils, facing La Bestia, exposed north-west. The grapes are de-stemmed and there are 11 days of skin contact. The free-run juice is raised in stainless steel while the pressed juice is raised in old barrels. After about 5 months, the wines are blended and bottled in May.
