The only white wine made by Yoyo, Restaké is pure Catalan sunshine. The old vines of Grenache Blanc and Grenache Gris are planted on steep slopes of black schist at 300 meters, just above Chime R. With some of the most majestic views of Banyuls, the vines overlook the Mediterranean and the surrounding garrigue filled mountains. In 2017 Yoyo began adding a touch of young carignan blanc (planted from rootstocks from Danjou Bannessy), searching for tension and acidity. This balance between the richness and texture of the ripe Grenache, and the freshness and energy from the Carignan make Restaké incredibly dynamic at the table.
